HOW TO TRANSFORM LEFTOVER CHICKEN AND VEGETABLES

9/10 PEOPLE WHO LIVE A FITNESS LIFESTYLE EAT CHICKEN AND VEGETABLES FOR DINNER.

Just kidding!! But it seems like it, doesn’t it? 9/10 of my dinners are chicken and veg, but that’s because I LOOOVE it!

Lately, my allergies have got me stuffy, and that’s got me craving warm comfort-y foods! So what better way to use leftover chicken and veggies than in soup form?

This bowl is filled with:

  • Chopped kale
  • Carrots
  • Celery
  • Zucchini
  • Grilled chicken breast

For the broth:

  1. Boil and then simmer a small pot of water (I used 2 cups for 1 serving)
  2.  Add salt, pepper, thyme, parsley, chopped onion, and chicken. Simmer until flavourful.
  3. Stir in leftover veggies and cook until heated!

 

That’s it!!

 

For a heartier meal, you could add beans and cubed:

  • Potato
  • Pweet potato
  • Butternut squash
  • Acorn Squash
  • Parsnips
  • Beets

Other fun ingredients include:

  • Corn
  • Bok Choy
  • Collard Greens
  • Peppers
  • Eggplants
  • Onions
  • Leeks

The easiest way to transform your leftover chicken and veggies into a fresh, flavourful, feel-good soup!
