It is 19 degrees, this Thursday, June the 7th, and THESE are your morning announcements!

I used to do this every morning for our school- every time I write “Good Morning!”, I have to follow it up with the weather and date!

This fresh, summery month has me craving all the fresh foods, like limes and cherry tomatoes.

Routine loving me craves egg white omelets…

And year round me craves burrito bowls!

This open faced omelet is a combo of all of these, and is packed with micronutrients with all the classic burrito bowl flavours.

You could even fold this omelet taco-style or roll it like a burrito!

The fun in this recipe is the versatility of toppings… Make an open faced egg white omelet, and add all the fresh ingredients in your fridge! These could include:

  • Avocado
  • Low Fat Cheese
  • Salsa
  • Chopped cucumbers
  • Squash
  • Chopped Cherry Tomatoes
  • Onions and Yellow bell peppers, sauteed
  • Lentils
  • Black Beans
  • Beef, Chicken, or Turkey

Season with Homemade Burrito Seasoning:

  • 1/2 tsp Chili powder
  • 1/4 tsp Garlic
  • 1/2 tsp Cumin
  • 1 tsp Oregano
  • Salt and Pepper
