Speedy S’mores Protein Cookies
I’ve been all about easy study snacks lately! The ingredients take a few seconds to toss into the bowl and mix, and 6 minutes to bake.
Nutritional Information for a regular S’more (2 Honey Graham Crackers, 1 Marshmallow, 1 Hershey’s Square)
Nutritional Information for 1 S’mores Cookie (makes 8)
🍪 1 scoop (36g) Chocolate whey protein
🍪 2.5 tbsp (40g) coconut flour (Sifted! You don’t want little bubbles of coconut flour in there… not a pleasant surprise!)
🍪 granulated sweetener of choice (I used 1/4 cup monk fruit extract)
🍪 1/4 tsp baking powder, vanilla extract, pinchsalt
🍪 2 tbsp (30g) melted coconut oil
🍪 1.5 (50g) egg whites (could sub 1 egg)
🍪 Mini marshmallows
🍪 Sugar free syrup or melted dark chocolate chips
🍪 1 crumbled graham cracker
1) Preheat oven to 350.
2) Combine dry and wet ingredients in separate bowls, then mix together. It will be crumbly at first, but give it a good knead and it will form a nice dough.
3) Roll into balls, place on a parchment lined baking sheet, and flatten to 1cm thick with your palm.
4) Bake for 4 minutes, remove, and press marshmallows into top. Return to oven for 2 minutes. (If you’d like to leave the marshmallows off, bake for 6 minutes total)
5) Remove and drizzle with chocolate before serving
I actually found these to be better the following day- True crispy cookie consistency. I have a little marshmallow-less baggie of these in my backpack for some mid class noshing!
