Who else has heard of this sushi burrito craze? I understand why these are popular… The fillings are up to you, they’re super fun to make, and make the perfect light snack. The more colourful, the better!
EASY 5 MINUTE SUSHI BURRITO WITH CAULI-RICE

•50g cucumber, peeled into strips
•50g raw cauliflower, pulsed into “rice”
•25g purple cabbage
•100g cooked shrimp
•1 nori sheet
•salt, pepper, garlic
•2 tbsp coconut aminos (a soy sauce substitute- you could also use regular soy :))
1) Sauté cauliflower rice with garlic, salt, and pepper until cooked, leaving about 2 cm on either side.
2) Press cauliflower on the top 1/3 of the nori sheet, followed by the cucumber, purple cabbage, and shrimp.
3) Fold in the outside edges and then fold the top over the fillings. Tuck it in and roll to the end. Refrigerate for 5 minutes to set.
4) Dip in coconut aminos.
